Cooking is all about measuring out ingredients, mixing them together and getting something yummy at the end of it!
So imagine a recipe that asked you to measure out 100 g of chocolate.
If the recipe asked you to then melt the chocolate, how much melted chocolate would you be left with?
You'd still have 100 g! Even though the chocolate has gone from solid to liquid, the mass has stayed the same.
So it seems that when something changes state, its mass stays the same. This is because the number of atoms in the substance are the same - none of them have been destroyed or created - they've just moved around a bit. This is called conservation of mass.
