Written and spoken English are two very different ways to communicate.
There are rules when writing that we don't adhere to when speaking, such as punctuation.
We use punctuation when writing to show pauses, emphasis, questions etc., that we don't use when we are speaking.
We would not write: I am furious said loudly exclamation mark shouted Jim.
That sounds ridiculous. Instead, we might write:
"I am FURIOUS!" shouted Jim.
We would know that the word in capitals means it has more emphasis and that the exclamation mark suggests it is being shouted.
There are also situations where it would be better to use a specific type of communication - and that communication needs to be used in a particular way.
For example, you wouldn't speak to a doctor in the same way that you would speak to your best friend.
